The olives are cured in the traditional way, with sea salt and no lye, and are never heat-processed or treated with chemical ripening agents or preservatives, as many olives are. This is the mildest of the seasoned blends offered by Good Faith. Along with the benefits of salt-cured lactofermentation, the brine for these olives includes live-culture brown rice vinegar, which is mild enough to allow both sets of beneficial organisms to thrive.
