In our version of this traditional Argentinian stew, grassfed beef is simmered with first-of-the-season local butternut squash from Seely Farmstand in Sonoma, along with potatoes, sweet potatoes, and lima beans with nixtimalized posole (corn hominy) from Anson Mills for a delightfully complex dish. In Argentina this stew is typically served with a hot pepper sauce.
