Freestone Ranch in Sonoma is just starting to offer their meat to a wider audience. The cows roam on pastures according to a system of grazing management called known as Holistic Grazing or Restoration Ranching, which mirrors their natural movement habits and is extremely beneficial for both the animals and the environment. This grazing pattern maximizes the sequestration of carbon and methane, encourages extremely deep roots and a thriving soil microbiome, increases drought resistance and supports the biodiversity of native grasslands. Golden chicken fat from our roasted pastured chickens is infused with sauteed onions, then strained for this classic Eastern European cooking fat. It is a perfect ingredient for matzoh balls or matzoh brei, and can also be used for pan frying or as a alternative for butter on bread, steamed veggies and cooked starches. Schmaltz was prized by Jewish grandmothers as an immune system booster.

Product comes frozen. This concentrated paste combines the adaptogenic power of turmeric with a bit of black pepper, which is known to increase turmeric's potency many times over. Designed as a base for Golden Milk, a classic Ayurvedic healing drink, you can also add it to broth or rice, blend it onto curries or stir-fries, even add it to scrambled eggs!

Serving suggestion: to make Golden Milk, stir 1/2 teaspoon of Golden Blend into 1 cup of heated milk of your choosing. Note: If you are taking other dietary herbs or supplements, you may want to check with your practitioner to make sure this is compatible.

This recipe was developed by Three Stone Hearth chef Cevie Touré, who specializes in the cuisine of the African Diaspora, to recreate one of the most popular stews eaten throughout West Africa. It features chicken braised with tomatoes, onions, Paul's Produce carrots, New Family Farm cabbage and chiles. Our version is milder than what you would find in West Africa, but still has a bit of a kick! It can be eaten on its own, but is also wonderful over rice.

Plumper and more substantial than the word "grits" usually implies, Carolina Gold rice grits are a Southern classic that are served as a side dish or base for Stewed Sea Island Red Peas to form the old-fashioned regional favorite, "Reezy Peezy." The grits come from Anson Mills, a company dedicated to preserving heritage grains. In our version of Reezy the grits are simmered, drained, rinsed, then buttered with plenty of Straus butter. We recommend reheating and then ladling on plenty of the "Peezy."

Frozen -- Ethiopian Beef Stew with Aromatic Spices and Carrots

Known as Sega Wat, this is one of the classic stews of Eritrea and Ethiopia. This version is made with Marin Sun Farms grassfed beef and carrots from Paul's Produce in Sonoma, slowly braised in a richly flavored sauce of housemade berbere (a distinctive and complex spice blend) and niter qibbeh (a regional ghee infused with aromatics), tomato paste, red wine, onions, garlic and mineral-rich bone broth. Usually eaten with injera, the flatbread common in the horn of Africa (available in the East Bay at Cafe Colucci; also available in a gluten-free version), it can also be eaten by itself, or paired with sourdough bread, naan, tortillas, rice or couscous. Pick up a jar of Aster's Eritrean Pesto for the perfect green sidekick!

Sea Island red peas are part of Slow Food’s Ark of Taste. They are a traditional legume of the Carolina low country and an integral part of the famous Gullah dish “Reezy Peezy.” The peas are simmered until tender in pork trotter broth with onions, garlic, mushrooms and a pinch of curry powder to make a scrumptious “gravy” that is eaten over Carolina Gold Rice Grits (“Reezy”). It is traditionally served with a pickled vegetable, so try it this week with our Haitian Spicy Pickled Cabbage (Pikliz).

Once we bought our own smoker there was no stopping us! Our house-cured, pasture-raised smoked pork belly (aka bacon) uses honey to be GAPS Diet-friendly. Serve these succulent nuggets at the center of a charcuterie and pickle plate, in omelettes, or in a bowl of hot broth with fresh soba noodles and herbs.
