Dulse, a kind of red algae, has been used in Europe for at least 1,500 years, and there is a reference in a Chinese health manual from 600 BC about the necessity of feeding red dulse to the Chinese kings to insure their longevity.   Dulse is rich in such minerals as iodine for thyroid support, chromium for blood-sugar regulation and manganese for supporting healthy bone formation. It is also rich in valuable omega-3 fats and other fat-soluble carotenoids.  

Wakame is used liberally in traditional Japanese cuisine as a flavoring in soup as it pairs well with miso. The most intriguing aspect of wakame is that it is rich in a chemical called fucoxanthin, which inhibits the accumulation of fat in cells, thereby preventing obesity. Its use as a safe and natural weight-loss aide is being studied. Because of the ability of fucoxanthin to inhibit the accumulation of fat, it also lowers the LDL levels in the blood.

Kelp is a rich source of fucoidan, which has an anti-inflammatory effect as well as stimulating apoptosis (programmed cell death) in cancer cells. In addition, kelp has been shown to lower the serum estradiol levels, the type of estrogen associated with breast and uterine cancer. Finally, kelp is rich in sodium alginate, which has been shown to reduce the absorption of radiation from the gut by 50 to 80 percent.

Grain Soaking Starter

This starter is full of the enzyme phytase, which breaks down phytic acid, a component of whole grains that blocks the absorption of calcium, iron, and zinc and can lead to mineral deficiencies. Soaking whole grains in water with this starter added before cooking can significantly reduce the phytic acid in the grains, making your cooked grains more nutritious as well as more digestible. Use with brown rice, oats, millet, quinoa and other whole grains that contain phytic acid. 

How to use: for each cup of grain, soak in 2 cups of filtered water with 1/4 cup of starter added. For best results, soak for 24 hours then strain, rinse, and cook the grain.
 
Kept refrigerated, the starter will last up to a month. To make your own fresh starter, after soaking brown rice with this starter, save the soaking water in a jar. Refrigerate and use as needed.

This flavorful gelatin-rich broth is made from Marin Sun Farms, SunFed Meats, or True Grass Farms grassfed beef bones and browned meat, filtered water, and a splash of apple cider vinegar. Our beef broth is cooked for approximately 48 hours before being jarred, lidded and cooled. According to Dr. Thomas Cowan, "In healthy, traditional cultures, when an animal was slaughtered, all the parts were put to use, including the bones, to make mineral-rich broth. Our modern diet, having largely forgotten the use of broth as the basis of our cooking, is estimated to have less than half the mineral content of more traditional diets. This rich mineral content and the fact that soup broths greatly aid digestion are just two of the many reasons why everyone should make soup broth a part of their daily diet."

We do not recommend that you freeze the beef broth in these jars. Although the jars are meant to be freezer-safe, we have found that the beef broth can still crack the jar when frozen. You can transfer the broth to a different container to freeze it. We find that, unopened, the broth lasts for four weeks or more in the fridge.

Piimä Cream

Piimä is a culture from Scandinavia that can be used to culture milk or cream into a delicious and probiotic dairy product. Culturing cream with piima culture produces a topping similar to crème fraîche or sour cream. According to Sally Fallon Morell, author of Nourishing Traditions, piimä was originally derived from the milk of cows that fed on the butterwort plant. Centuries ago, Scandinavian farmers discovered that milk clabbered better when their cows consumed this herb.

Piimä Cream is cultured at room temperature, and you can use a spoonful of our Piimä Cream to culture your own cream. Use about 2 tablespoons of Piimä Cream to one pint of cream and allow to culture for about 24 hours.

Alice Rosenthal, beekeeper and rescuer, likes to think of honey as in Forest Gump's famous line, "Local honey is like a box of chocolates - you never know what you might get". The beauty and surprise behind local wildflower honey is - you just don't know what you're gonna get. But one thing for sure - they are all going to taste great and different from each other. Alice of Golden Gate Neighborhood Honey maintains slightly over 100 hives in Alameda and Contra Costa Counties. The majority of hives are from West Richmond, Upper Fruitvale, and North Oakland/South Berkeley areas. Most varieties are wild honey that was harvested while rescuing and relocating honey bees from naturally constructed hives. The honey is processed differently when it is harvested from a wild environment. Because there are no frames to support the comb it must be crushed (with hands) to liberate the honey. We mellow the flavor of Seka Hills olive oil with Straus yogurt cream, which also helps to preserve the fresh mayonnaise.
