This variation on our Spicy Red Kimchi features carrots along with purple daikon and black Spanish radish from Feral Heart Farm in Sonoma. Based on traditional recipes, this live-cultured kimchi uses plenty of authentic Korean red pepper flakes as well as garlic, ginger and fish sauce. This kimchi packs some heat, and its warming umami goodness ripples across the peppery notes.
