Inspired by traditional recipes, this nightshade-free kimchi uses ample amounts of Tulelake's local organic horseradish as well as garlic, ginger, crisp celtuce stems from Feral Heart Farm, shiitake mushrooms and daikon to create a beautiful and distinctive kimchi. It has a bit of gingery-horseradish bite, but not the kind of heat you get with hot chiles. Its warming umami goodness ripples across the peppery notes. For this version we left out the fish sauce and honey to make a vegan version that omnivores will also love!
