Five-Week Food-Based Cleanse (1/25/20-2/22/20, 10-11:30am)

Discover how good you can feel when you remove all forms of sugar from your diet and the even keel your experience when you get off of the blood sugar roller coaster. Taking a “time out” from your regular eating routine, no matter what it is, to do a focused cleanse is a great way to get back to center. 

Week 1: How to prepare mentally, physically and emotionally to make successful changes to your diet.

Week 2: Digestion know how… it all starts in the gut.

Week 3: Balanced Blood Sugar… how sweet it is.

Week 4: Oil Change…diving deeper into fats.

Week 5: Celebrating our Success and Next Steps… how to reintroduce foods and detect food sensitivities.

The diet is anti-inflammatory and eliminates all refined sugar, processed foods, dairy and limits starchy carbohydrates. We focus on fresh vegetables and fruits, good quality animal protein, nuts, seeds and healthy fats timed at appropriate intervals for ultimate blood sugar stabilization.

You will be fully supported as you go through this gentle, yet powerful detox. Each week will combine a check in and support, a lesson and call to action. Want to give something creative and personal this year as a holiday gift but bored with your same old crafting ideas?

Spice up your DIY skills and learn to make classic spicy kimchi with TSH lead fermenter, Hanna Towers. At this session you will create your own custom batch of kimchi and leave with the skills necessary to make kimchi at home! If the idea of making your own kimchi intimidates you, don’t worry, under Hanna’s tutelage, you’ll develop the confidence to know what ingredients and techniques you need to transform a bowl of cabbage and spices into a robust probiotic condiment.

Each student will get a recipe and three jars of kimchi to ferment at home! ($30 value)

Her interest with fermentation began with reading books on winemaking in sixth grade, to taking classes in food science in college. Kraut Making 101 (2/5/20, 6-7:30pm)

By what magic does salt preserve fresh vegetables and turn them into probiotic nutritional powerhouses? In this class, Three Stone Hearth’s lead fermenter Hanna Towers will reveal and revel in the tradition and craft of sauerkraut-making, as well as the science and nutrition behind it. This hands-on experience will teach you how to prepare delicious, live culture sauerkraut. Plus you’ll go home with a jar of your own artisanal creation!

Chaya-Ryvka Diehl from Living Vision Kitchen will teach you how to make fresh young coconut yogurt from home. With only two main ingredients, this can become an easy and delicious way to incorporate dairy-free, probiotic-rich yogurt into your life! If you miss the Coconut Yogurt she was making and selling at TSH, now’s your chance to discover her secrets!

Learn how to open young coconuts, or source a quality frozen alternative, and how to prepare young coconut into a thick and creamy yogurt without any additional fillers or thickeners. This is an allergen-free alternative to traditional yogurt, rich in gut-healthy probiotics, and is a low glycemic option for those practicing a ketogenic lifestyle. It is allowed as part of the GAPS, AIP and low FODMAP diets.

You’ll get to sample this delicious yogurt in class and go home with a detailed recipe and instruction packet, including recipes for tasty, wholesome toppings and creative ways to use this yogurt for other simple and satisfying foods.

Chaya-Ryvka Diehl is the owner of Living Vision Kitchen, a local Paleo-Vegan food line, serving Bay Area health food stores and cafes with plant-based, grain-free comfort foods.
