"Healthy Bones" Strawberry Shrub

Back by popular demand -- and seasonal availability! For this very special shrub, we infused calcium-rich herbs in vinegar for several weeks to extract their bone-building minerals. Then we strained the vinegar and mixed it with nectar from strawberries and raw honey. This shrub can be used to make a delicious beverage by diluting it 4:1 with bubbly or still water, a sprig of mint or a squeeze of lime (or both).

Chicken Bone Broth

This flavorful broth is made from the bones, feet and heads of pastured chickens from Best of Breed Farm, which are fed organic, corn-free and soy-free feed from Modesto Milling, and a mix of organic and pastured bones from Mary's Chicken (Mary's pastured birds are fed conventional feed that is certified GMO-free), along with extra feet from Marin Sun Farms (which are pastured, not organic, with feed grown by Mennonite farmers in Northern California). A splash of Bernie's apple cider vinegar helps draw minerals out of the bones. We simmer it at just the right temperature for 12-16 hours to draw out the nutrients without damaging them by overcooking, and to bring out a lovely flavor.

According to Sally Fallon, "[Bone broth] contains minerals in a form the body can absorb easily—not just calcium but also magnesium, phosphorus, silicon, sulphur and trace minerals. It contains the broken down material from cartilage and tendons--stuff like chondroitin sulphates and glucosamine, now sold as expensive supplements for arthritis and joint pain."

You can simply heat the broth with a little salt and pepper, tamari, fish sauce, coconut aminos, miso or any flavoring of your choice. Add it to soups and stews, cook your rice or any starches in it, or braise chicken parts and vegetables for dinner. Cook it down for an umami-rich demi-glace! TSH worker-owner Mud Hut (yours truly!) loves making Egg Drop Soup, cooking the whites in the broth first with a little salt, then adding the yolk and turning the heat off after just a few seconds.

One ingenious way to incorporate broth into your life is to freeze it in ice cube trays, then store the cubes in a bag or container in the freezer. Heat a few anytime you want a cup of broth, add a few cubes when you cook rice or any starch, add to a soup or stew...you get the picture.

Golden chicken fat from our roasted pastured chickens is infused with sauteed onions, then strained for this classic Eastern European cooking fat. Schmaltz was prized by Jewish grandmothers as an immune system booster.

This seasonal beverage features Yerba Santa, a California native plant that was valued by the First Peoples, that has historically been used to treat asthma and other respiratory issues. It is also known as Mountain Balm and the Concow people of northeastern California call it wä-sä-got’-o. The plant also has the reputation of clearing and moving grief, and is used in environmental restoration as it can restore damaged lands and overgrazed ranchland. Cranberry Apple Kefir

Dairy-free water kefir. Water kefir grains, also called tibicos, are used to ferment a base of filtered water with unrefined cane sugar and just a touch of molasses. The sugars are metabolized by the kefir grains to produce a light but rich effervescent base. The brew is then flavored with Gravenstein apple juice from Sonoma County and cranberry concentrate to produce a bubbly probiotic “soda.” Cranberries are rich in antioxidants and other nutrients, making this not only a delicious drink but a nourishing tonic as well.

Just put the jar contents in a pot, add water (or our bone broth!) and bring to a simmer. Cook until tender, and eat! Dried Soup Mix Cooking Instructions

Directions: Pour pint of dried soup mix into a medium pot. Add 1.5 quarts of water or bone broth and bring to a boil. Simmer about 40 minutes, or until lentils are tender, adding liquid to desired thickness. Yields approx. 1.25 quarts soup

This old-fashioned vegetable soup starts with one of the cornerstones of traditional French country cooking. The term mirepoix refers to a sautee of vegetables and herbs that often serves as a base for soups, sauces, meat braises and other dishes. Here, we saute Paul's Produce carrots, celery and onions with herbs in a little chicken fat from our house-roasted chickens, then add mineral-rich Celtic sea salt and our chicken bone broth for a classic, nourishing, comforting soup that can be eaten as is, and has endless other possibilities!
 
This is a great option for those who want bone broth in their lives but are trying to eat little or no meat (you can always add your own, of course). Try it with rice, noodles, matzo balls or baby potatoes. Add greens or other seasonal vegetables to make a customized vegetable soup. It is a fantastic base for braising chicken legs or thighs. Friar's Cyder

This frozen, ready-to-cook raw meatloaf is made with grassfed beef. Instead of breadcrumbs, we use lentils that have been soaked and pureed to create a classic meatloaf texture. This flavorful gelatin-rich broth is made from Marin Sun Farms, SunFed Meats, or True Grass Farms grassfed beef bones and browned meat, filtered water, and a splash of apple cider vinegar. Our beef broth is cooked for approximately 48 hours before being jarred, lidded and cooled. According to Dr. Thomas Cowan, "In healthy, traditional cultures, when an animal was slaughtered, all the parts were put to use, including the bones, to make mineral-rich broth. Our modern diet, having largely forgotten the use of broth as the basis of our cooking, is estimated to have less than half the mineral content of more traditional diets. This rich mineral content and the fact that soup broths greatly aid digestion are just two of the many reasons why everyone should make soup broth a part of their daily diet."

We do not recommend that you freeze the beef broth in these jars. Although the jars are meant to be freezer-safe, we have found that the beef broth can still crack the jar when frozen. Piimä Cream

Piimä is a culture from Scandinavia that can be used to culture milk or cream into a delicious and probiotic dairy product. Culturing cream with piima culture produces a topping similar to crème fraîche or sour cream. According to Sally Fallon Morell, author of Nourishing Traditions, piimä was originally derived from the milk of cows that fed on the butterwort plant. Centuries ago, Scandinavian farmers discovered that milk clabbered better when their cows consumed this herb.
