This is the precious brine collected from the Umeboshi plums just before they are jarred. It is very rare and we will only have it for a short time. It is a great alkalinizer and a perfect vinegar substitute. It has a bright salty flavor, perfect to add to broth, salad dressing or for seasoning soups and stir-fries.
