We haven't done this one in a while! Vadas are small fritters commonly eaten in South India, similar to falafel. Our version of Vada Dough is made with red lentils, which are activated by soaking and then pureed with plenty of ginger, ground fennel seeds and fresh cilantro. Like our Falafel Dough, this dough can be formed into small patties or dropped by the spoonful into hot fat for a delicious pan-fried fritter (try coconut oil or ghee). Top them with some of our Yogurt Cream or Piima Cream.
Ingredients: red lentils,* tomato paste,* ginger,* cilantro,* coconut oil,* Celtic sea salt, lemon juice,* New Mexico green chili powder, turmeric,* coriander,* cumin* and fennel seeds* (* = organic)
