This cheese is made from raw milk from a closed herd of Holstein cows that graze on the green pastured hills overlooking Tomales Bay. The dairy is owned by Marin County's Giacomini Family. Serve crumbled on salads, with crostini crackers and raw honey, or melted on our beef patties.
