Frozen -- Stewed Sea Island Red Peas (Peezy)

1 pint jar

Sea Island red peas are part of Slow Food’s Ark of Taste. They are a traditional legume of the Carolina low country and an integral part of the famous Gullah dish “Reezy Peezy.” The peas are simmered until tender in pork trotter broth with onions, garlic, mushrooms and a pinch of curry powder to make a scrumptious “gravy” that is eaten over Carolina Gold Rice Grits (“Reezy”). It is traditionally served with a pickled vegetable, so try it this week with our Green Tomato Chow Chow.

Ingredients: Anson Mills Sea Island red peas,* pork trotter broth, onions,* carrots,* celery,* lard, garlic,* Celtic sea salt, porcini powder,* housemade curry powder (coriander seeds,* cumin seeds,* turmeric,* yellow split peas,* black peppercorns,* brown mustard seeds,* fenugreek,* cayenne*), Applewood smoked salt, celery salt,* wild harvested kombu, red chile pepper flakes*  (* = organic)
