Beets are sliced and cultured in water with yogurt whey and Celtic sea salt to make this traditional tonic drink. Sally Fallon Morell describes this drink as being "valuable for its medicinal qualities and as a digestive aid. Beets are just loaded with nutrients. One 4-ounce glass, morning and night, is an excellent blood tonic, promotes regularity, aids digestion, alkalizes the blood, cleanses the liver and is a good treatment for kidney stones and other ailments..." Versions of Callaloo can be found throughout the Caribbean. Ours is closest to the one you might find in Grenada -- a creamy puree of greens rich with coconut milk. While traditional versions often feature taro greens or amaranth, the soup is easily adapted to whatever leafy greens flourish locally and in season. This week we're featuring a mix of collard greens, chard and dandelion greens. A hint of ginger, garlic, coriander and nutmeg augment the natural richness of the greens, and plenty of coconut milk forms the base.
Ingredients: collard greens,* chard,* coconut milk (guar gum-free),* onions,* dandelion greens,* coconut oil,* garlic,* lemon juice,* ginger,* Celtic sea salt, black pepper,* coriander,* nutmeg,* mace* (* = organic)

This flavorful broth is made from the bones, feet and heads of organic chickens. A splash of Bernie's apple cider vinegar helps draw minerals out of the bones. We simmer it at just the right temperature for 12-16 hours to draw out the nutrients without damaging them by overcooking, and to bring out a lovely flavor.
According to Sally Fallon, author of Nourishing Traditions, "[Bone broth] contains minerals in a form the body can absorb easily—not just calcium but also magnesium, phosphorus, silicon, sulphur and trace minerals. It contains the broken down material from cartilage and tendons--stuff like chondroitin sulphates and glucosamine, now sold as expensive supplements for arthritis and joint pain."
You can simply heat the broth with a little salt and pepper, tamari, fish sauce, coconut aminos, miso or any flavoring of your choice. Add it to soups and stews, cook your rice or any starches in it, or braise chicken parts and vegetables for dinner. Cook it down for an umami-rich demi-glace! TSH worker-owner Mud Hut loves making Egg Drop Soup, cooking the whites in the broth first with a little salt and pepper, then adding the yolk and turning the heat off after just a few seconds.
One ingenious way to incorporate broth into your life is to freeze it in ice cube trays, then store the cubes in a bag or container in the freezer. Heat a few anytime you want a cup of broth, add a few cubes when you cook rice or any starch, add to a soup or stew...you get the picture.

Our latest healthy snack offering! Raw organic pumpkin seeds are soaked overnight in water and Celtic sea salt, and then sprouted prior to being dehydrated at a low temperature with a little salt until crispy and delicious, preserving the nutrients and rich flavor.
Pumpkin seeds are a nutritional powerhouse. The process of sprouting helps unlock nutrients so your body can better absorb them.
A ¼ cup of sprouted pumpkin seeds contains 8g of plant-based protein.
They are an excellent source of zinc, magnesium, phosphorus, copper, and manganese and also a good source of iron.
There are many wonderful ways to add sprouted pumpkin seeds to your diet. They can easily be added to any sweet or savory dish. Some of our favorite uses are on a soup, on a salad, in a pesto, or ground into seed butter. Perfect in school lunch boxes, and as a post workout pick-me-up.

**Dandy Blend is made of the water-soluble extracts of five ingredients; three roots and two grains (barley and rye), not from the ingredients themselves. The ingredients are roasted, covered with hot water, and allowed to steep. The water, with the soluble portions of all the components, is separated from the grounds. The remaining fine brown powder left is what becomes Dandy Blend. All the gluten and other water-insoluble substances are left behind.

This flavorful gelatin-rich broth is made from Marin Sun Farms beef bones and browned meat, filtered water, and a splash of apple cider vinegar. Our beef broth is cooked for approximately 48 hours before being jarred, lidded and cooled. According to Dr. Thomas Cowan, "In healthy, traditional cultures, when an animal was slaughtered, all the parts were put to use, including the bones, to make mineral-rich broth. Our modern diet, having largely forgotten the use of broth as the basis of our cooking, is estimated to have less than half the mineral content of more traditional diets. This rich mineral content and the fact that soup broths greatly aid digestion are just two of the many reasons why everyone should make soup broth a part of their daily diet."
We do not recommend that you freeze the beef broth in these jars. Although the jars are meant to be freezer-safe, we have found that the beef broth can still crack the jar when frozen. You can transfer the broth to a different container to freeze it. We find that, unopened, the broth lasts for four weeks or more in the fridge.

Sauerkraut brine is a wonderful tonic for the digestion, and recommended as a great way to rebuild the intestinal flora. This brine, harvested from our weekly krauts, can be consumed in small amounts to stimulate digestion — “brine shots” are a weekly ritual in our kitchen, and everyone was thrilled with the brine this week! Brine is also wonderful added to salad dressings, or even used instead of vinegar. Lastly, if you are culturing vegetables like sauerkraut at home, it acts as a perfect starter.
