A shrub is a traditional fruit concentrate, like a syrup, preserved with vinegar and used to make or flavor beverages. A few ounces with bubbly or still water makes a fabulous drink all on its own (we recommend a dilution of 4 or 5 parts water to 1 part shrub), and there's no reason you couldn't use it as a cocktail mixer if that's your thing! The term "broth" does not always mean the same thing to everyone. In the most commonly accepted usage, what we make is called "Bone Broth." It is the most gelatin-rich (meaning protein-rich) and mineral-rich of these variations, and cooked the longest. The term "broth" on its own (or "chicken broth" or "beef broth," etc.) usually means it was made with meat and little or no bones, cooked for a shorter time, less than 6 hours, and serves more as a flavoring base than a nutritional vehicle. "Stock" most often refers to bones simmered with vegetables and possibly herbs or whole spices, perhaps some meat, and is also usually cooked for less than 6 hours.
According to Sally Fallon, author of Nourishing Traditions, "[Bone broth] contains minerals in a form the body can absorb easily—not just calcium but also magnesium, phosphorus, silicon, sulphur and trace minerals. It contains the broken-down material from cartilage and tendons--stuff like chondroitin sulphates and glucosamine, now sold as expensive supplements for arthritis and joint pain."
If you're new to bone broth in your diet, or concerned about consuming a whole jar within 5 days of opening it, you can freeze what you don't need right away. One ingenious way to introduce broth into your life, or to simplify portion control, is to freeze it in ice cube trays, then store the cubes in a bag or container in the freezer. Heat a few whenever you want a cup of broth, add a few cubes when you cook rice or any starch, or when you're heating up a soup or stew...you get the picture.

Stovetop reheating: cut into pieces and place in a pan with a bit of broth or water. Lid the pan and gently steam over medium-low heat until it reaches desired temperature throughout.
Oven reheating: remove paper lid and cover with foil, then place in oven pre-heated to 325° for 30-40 minutes or until warm throughout.
Dairy-free water kefir. Water kefir grains, also called tibicos, are used to ferment a base of filtered water with unrefined cane sugar and just a touch of molasses.
