This old-fashioned vegetable soup starts with one of the cornerstones of traditional French country cooking. The term mirepoix refers to a sautee of vegetables and herbs that often serves as a base for soups, sauces, meat braises and other dishes. Here, we saute carrots, celery, leeks and onions with herbs in a little chicken fat from our house-roasted chickens. We add mineral-rich Celtic sea salt and our chicken bone broth for a classic, nourishing, comforting soup that can be eaten as is, and has endless possibilities!
This is a great option for those who want bone broth in their lives but are trying to eat little or no meat (you can always add your own, of course). Try it with rice, noodles, matzo balls or baby potatoes. Add greens or other seasonal vegetables to make a customized vegetable soup. It is a fantastic base for braising chicken legs or thighs.
