This variation on our Spicy Red Kimchi features lovely local rainbow carrots. Based on traditional recipes, this live-cultured kimchi uses plenty of authentic Korean red pepper flakes as well as garlic, ginger and naturally fermented fish sauce. This kimchi packs some heat, and its warming umami goodness ripples across the peppery notes.
