"Healthy Lungs" Apple Herb Shrub

For this seasonal shrub, we infused Bernie's Apple Cider Vinegar with locally foraged yerba santa leaves and fresh thyme, both known for their lung-supporting properties. We added housemade juice from local apples along with raw local honey to balance the traditional tang of the oxymel (vinegar-infused medicinal tonic). This shrub can be used to make a delicious beverage by diluting it 4:1 with bubbly or still water, a sprig of mint or a squeeze of lime (or both) -- or of course adding some of Bernie's Gravenstein Apple Cider.

Bernie's Best Raw Apple Cider Vinegar

This raw apple cider vinegar is made from the cider of apples growing in Mendocino's historic Anderson Valley orchard. The 80-acre property belongs to the Pomo Tierra collective, established in 1971. Bob Bernstein, known as Bernie, is a member of the collective and has managed the orchard since the early 1970s. In fact, he used to deliver to our kitchen location when it was the Berkeley Food Coop decades ago! The apples that went into this cider vinegar are primarily from Gravenstein apples but also includes Fujis, Sierra Beauties, Pink Ladies, Golden Delicious, and other varieties in the Pomo Tierra orchard.

Finally--a store-bought mayonnaise as nourishing and delicious as homemade. No soybean oil! We mellow the flavor of Seka Hills olive oil with Straus yogurt cream, which also helps to preserve the fresh mayonnaise. The red shiso leaves give the distinct red color and flavor to the Umeboshi Plums; they sit together for months in the pickling bucket. After the aging process is done, they take them out, sundry them, and make into a delightful condiment.

It has that bright tanginess from the plums and still assertive shiso flavor. Japanese people love to sprinkle Yukari onto their bowls of steamed rice. Our recent favorite is to sprinkle on melon or fig salads. The unique flavor and its natural color are unlike anything else!
