Split peas are slowly simmered in a vegetable broth with leeks and celery, then pureed with fresh dill and combined with a saute of tender kale, carrots and rutabagas for a plant-powered spin on the classic.
Ingredients: green split peas,* leeks,* celery,* carrots,* rutabaga,* onions,* kale,* olive oil, arugula,* fresh dill,* Celtic sea salt, apple cider vinegar,* Concentrace Trace Minerals,^ kombu, baking soda^^ (*=organic)
Recipe is vegan, gluten-free, nightshade-free and black pepper-free. Each pound of beans are cooked with a one inch piece of kombu sea vegetable which is not on the GAPS Diet protocol Introductory Diet (see notes below).
^The liquid trace minerals are used in minute quantities in the cooking of the split peas to prevent them from "seizing" (becoming hard when cooked).
^^Baking soda is used in pre-soaking the split peas, which are then drained and rinsed before cooking.
