Chicken Salad with Cilantro, Lime, Mint and Peanuts -- 16 oz

A lovely new, mayo-free chicken salad developed by our Kitchen Production Lead Peter Blackburn. We confit Mary's organic chicken breasts (in the roasted fat from the chicken parts we use to make our broth), which gives it a silky, moist texture and deep flavor. Fresh vegetables and gently toasted peanuts add a nice crunch, and the herbaceous dressing gives it a fresh, tangy flavor. 

A perfect addition to any picnic. Avoiding gluten? Serve in a lettuce cup for a refreshing lunch. Or try it with one of our gluten-free breads, or roasted seed crackers from Cult Crackers.

Ingredients: chicken,* cabbage,* carrots,* red onions,* olive oil, lime juice,* cilantro,* peanuts,* Celtic sea salt, raw honey, Red Boat Fish Sauce (anchovies, sea salt), serrano chiles,* mint* (* = organic) 

Recipe is gluten-free, dairy-free and black pepper-free.  CONTAINS PEANUTS.
