Large butter beans from Iacopi Farm in Half Moon Bay are soaked and then slowly simmered with chicken bone broth for flavor and a little kombu for digestibility and nutrition. Once the beans are tender, they are seasoned with leeks, sage, Seka Hills olive oil, white wine vinegar and a bit of black pepper.
