Grassfed brisket is marinated in a traditional seasoned brine, then braised in mineral-rich broth with aromatic spices and carrots, turnips, cabbage and rutabagas from local Bay Area farms. The term "corning" comes from the nuggets of rock salt often used in this traditional meat preservation method.

Note: We use nitrite because there is evidence that a small amount of sodium nitrite is healthier than a large amount of so-called natural vegetable-based nitrate such as celery powder, which can convert to toxic nitrosamines in the body.
