Inspired by traditional dishes of Eastern Europe, this soup features a housemade pork sausage seasoned with garlic and sweet smoked paprika, and enriched with a bit of pork liver. The sausage is is roasted, then simmered in broth with fresh cabbage from New Family Farm in Sonoma, and a variety of mushrooms. Tomato paste adds depth, and the soup is finished with a sprinkling of parsley and a splash of housemade sauerkraut brine. We recommend serving with a dollop of our Piima or Yogurt Cream and a spoonful of sauerkraut, as they do in Eastern Europe.
