Inspired by a surplus of Napa cabbage at the end of our menu week recently, Chef Aisha created a "rescue recipe" that we decided to bring into our regular rotation. In this mild vegetable saute, the earthy sweetness of carrots and coconut oil marry beautifully with the unique, aromatic headiness of asafoetida (used in Indian cuisine to add a savory, onion-garlic flavor.) Garlic and ginger add a bit of zing. Can be eaten hot or just slightly warmed up, on its own, over rice, with red lentils or as a side to marinated, grilled meat.
