This kimchi brine can be consumed in small amounts to stimulate digestion — “brine shots” are a weekly ritual in our kitchen! Brine is also wonderful added to salad dressings, or even used instead of vinegar. Lastly, if you are culturing vegetables like sauerkraut at home, it acts as a perfect starter.
