We added unpasteurized white wine vinegar infused with toasted fennel seeds, and topped it off with just the right amount of raw local honey to balance the tang of this oxymel (vinegar-infused tonic beverage).
 
A shrub is a traditional fruit concentrate, like a syrup, preserved with vinegar and used to make or flavor beverages. Unlike many others, our version uses raw honey for a treat free of refined sugars! A few ounces with bubbly or still water makes a fabulous drink all on its own (we recommend 4 or 5 parts water to 1 part shrub), and there's no reason you couldn't use it as a cocktail mixer. If you've been using the Strong Child syrup, don't worry, this is the same formula with one more herb (ginger!) and a bit more reishi. Wellness Syrup is a slightly updated formula that is potent enough for adults and safe for children.
