Inspired by traditional dishes of Eastern Europe, this soup features a housemade pork sausage seasoned with garlic and sweet smoked paprika, and enriched with a bit of liver. The sausage is roasted, then simmered in broth with fresh cabbage and a variety of mushrooms. Tomato paste adds depth, and the soup is finished with a sprinkling of parsley and a splash of housemade sauerkraut brine. We recommend serving with a dollop of yogurt and a spoonful of sauerkraut, as they do in Eastern Europe.

A dairy-free version of the Indian favorite, featuring our scrumptious, broth-based Coconut Tikka Masala Sauce. Broth-based sauces were integral to many traditional diets as a way to bring the digestive-supporting qualities of bone broth to meaty and starchy dishes. We'll go head-to-head with any mac & cheese! California brown rice is soaked overnight in enzymatic water, then steamed and mixed with Straus butter and milk, along with pastured eggs. We add sauteed kale, leeks, baby spinach, plenty of Sierra Nevada Graziers raw grassfed cheddar, and our own Yogurt Cream. It's all baked until golden for a delicious, classic casserole that can be eaten for breakfast, lunch or dinner, and is a big hit with kids!

Chicken livers are high in iron and selenium, vitamin A and B vitamins, and the flavor is quite a bit milder than beef liver. In our Pâté, organic chicken livers from Pittman Farms are pan-seared, poached in Straus pasture-raised butter and puréed with caramelized onions, parsley, nutrient-dense Celtic sea salt, Dijon mustard (gluten-free), a few drops of brandy and a touch of spice for a rich, deeply satisfying and nourishing spread that is topped with a thin layer of butter to preserve freshness. Our grassfed ground beef comes from Carman Ranch, the first Regenerative Certified meat producer in the country, and a collective of women-owned ranches in California and Oregon that practice holistic pasture management to support soil health, ecosystem diversity and carbon capture. And the meat is super-tasty! We blend in minced onions, herbs, sea salt and pepper, and enrich the meat with bit of pureed beef liver for a nutrient-dense patty. These hamburgers come raw, frozen and ready-to-cook.

Frozen -- Mini Meatloaf (RAW)

This frozen, ready-to-cook raw meatloaf is made with grassfed beef. Instead of breadcrumbs, we use lentils that have been soaked and pureed to create a classic meatloaf texture. We finely mince onions, carrots and celery, then enrich the loaf with a bit of liver, bind it with pastured eggs and season it lightly. This meatloaf will feed 2-3 people.

Instructions: Remove the paper lid before baking. Preheat oven to 350º. If desired, spread meatloaf with a layer of ketchup. Cover with aluminum foil and bake for 35-40 minutes if defrosted, one hour or more if still frozen. Uncover for last 10-15 minutes. Pierce with a knife to test if juices run clear. Defrosted meatloaf can also be rolled into meatballs, then cooked.

Escarole is one of the classic and deeply nourishing greens that is prized in Europe but sadly lacking in the American diet. Escarole's tender leaves have a hint of bitterness which is balanced in this dish by braising it in tomato broth with bay leaves for a rich and delicious "brodo." It is finished with grated Parmigiano Reggiano and black pepper. Add bone broth and re-season for a soup, or try serving it over polenta, rice, or pasta.
