Bacon Black Pig Meat Co.

The pigs are sustainably raised on family farms that respect the land and the animals in their care. the pigs are heritage breed, raised without antibiotics and hormones, and are allowed to roam free. This bacon is dry cured with brown sugar for up to 21 days and then finished with applewood smoking for about 12 hours. They are focused on quality not quantity. The result is a bacon that is perfectly balanced in salt, sweet, and smoke; complex from the brown sugar and real wood smoke; and one where you can taste the quality of the pork

Golden chicken fat from our roasted pastured chickens is infused with sauteed onions, then strained for this classic Eastern European cooking fat. It is a perfect ingredient for matzoh balls or matzoh brei, and can also be used for pan frying or as a alternative for butter on bread, steamed veggies and cooked starches. Schmaltz was prized by Jewish grandmothers as an immune system booster.

Inspired by a traditional recipe from Northeastern Thailand and Laos called Larb Moo, this tasty dish brings together ground pork with galangal (a root similar to ginger, but less spicy and more floral), Makrut lime leaves, fish sauce, cilantro and scallions for a delicious and aromatic dish that would be perfect over rice. Larb Moo is typically eaten room temperature with lettuce leaves, and you could try that with this dish as well.

Massa Organics brown rice is soaked, steamed and then mixed with Straus butter and milk, along with pastured eggs from Coastal Hill Farm in Sonoma. We then add sauteed kale from First Light Farm in Sonoma (whose weekly produce box you can sign up for and pickup during our Saturday store!), spinach and leeks, Sierra Nevada Graziers grassfed cheddar, and our own Yogurt Cream. It's all baked until golden for a delicious casserole that can be eaten for breakfast, lunch or dinner, and is a big hit with kids! Try it this week with our Velvet Underground Soup (Nightshade-free "Tomato Soup").
