Bacon Black Pig Meat Co.

The pigs are sustainably raised on family farms that respect the land and the animals in their care. the pigs are heritage breed, raised without antibiotics and hormones, and are allowed to roam free. This bacon is dry cured with brown sugar for up to 21 days and then finished with applewood smoking for about 12 hours. They are focused on quality not quantity. The result is a bacon that is perfectly balanced in salt, sweet, and smoke; complex from the brown sugar and real wood smoke; and one where you can taste the quality of the pork

Enjoy the bounty of our local harvests. A surprising and delightful combination of flavors marries beautifully in this probiotic cold soup, developed by one of our cooks. A variety of honeydew melons from Full Belly and Riverdog Farms and Paul's Produce, as well as Riverdog Farm Painted Serpent cucumbers form the base, and fresh citrus, mint, tarragon, horseradish and sauerkraut brine round out the flavor profile. You have to taste this refreshing seasonal treat to believe it!

It is enriched with lamb liver and bone broth for added nutrition. Flavored with tomatoes, ancho and guajillo chiles, garlic, and traditional spices, this twist on classic chili is delicious. Try it with avocado, a dollop of our Piima or Yogurt Cream, a spoonful of Sierra Nevada grated cheese and a sprinkling of scallions.

In the tradition of cold borscht comes this bright, refreshing chilled soup featuring beets from New Family Farm in Sonoma. In Lithuania, the soup is known as "Pickled Beet Apotheosis," so they were not messing around! A vegetable stock flavored with dill is the base, and Straus yogurt, our housemade Beet Kvass, sauerkraut brine and raw apple cider vinegar add a bright probiotic zing. Serve with a dollop of our Yogurt or Piima Cream.

Keema is a classic South Asian dish, popular in both India and Pakistan. In this version, ground lamb is simmered with soaked red lentils, ginger, garam masala, cumin and a pinch of cayenne. The keema is finished with crushed tomatoes, cilantro, and lemon juice for a delicious dish that can be eaten by itself or would be perfect with a dollop of Piima Cream.

Frozen -- Beef & Cabbage Casserole with Sweet & Sour Tomato Sauce (Halupki Pie)

1 large tin (7.5 in by 5.5 in)


Inspired by Eastern European stuffed cabbage rolls. Our filling is made with Marin Sun Farms grassfed ground beef that is sauteed with onions and herbs and then mixed with Massa Organics brown rice. This nutrient-dense version is enriched with liver and bone broth. We layer the filling with the traditional sweet and sour tomato sauce (ours is very lightly sweetened) and top it with sauteed green cabbage from New Family Farm.

Directions: Reheat portions in a covered pan with a little broth or water, or place entire pie in a 350º oven for 20-30 minutes or until warmed through.

Frozen -- Chicken Schmaltz

This product comes frozen this week. Golden chicken fat from our roasted pastured chickens is infused with sauteed onions, then strained for this classic Eastern European cooking fat. It is a perfect ingredient for matzoh balls or matzoh brei, and can also be used for pan frying or as a alternative for butter on bread, steamed veggies and cooked starches. Schmaltz was prized by Jewish grandmothers as an immune system booster.

Ingredient: rendered chicken fat* (infused with caramelized onions) from pastured chickens, onions

Recipe is gluten-free, dairy-free and GAPS, Paleo and Low FODMAP Diets-friendly.

*While onions are not included on the Low FODMAP Diet, when the onions are strained out, as they are here, the dish is acceptable.

Frozen -- Fresh Corn Custard (Budín de Maíz)

Our short local corn season is yielding its last ears, and we get to enjoy one of the great and versatile treats of Mexican cuisine! A custard of sweet corn from Bernier Farm in Sonoma with Straus milk, pastured eggs and Sierra Nevada Graziers grassfed cheddar cheese is baked with scallions and a bit of corn flour that has been soaked in limed water (nixtimalized) for added digestability and nutritient availability. Can be enjoyed hot, cold, or at room temperature.

Frozen -- Sweet Potato Tzimmes

Typically eaten at Rosh Hashanah, Tzimmes is a traditional side dish that celebrates the sweetness of life. Our version is made with a variety of sweet potatoes, dried fruit and spices, simmered together and finished with orange juice. Try adding to your next beef stew. "To make a big tzimmes over something" is a Yinglish expression that means to make a big fuss. This is perhaps because of all the slicing, mixing, and stirring that go into the preparation of the dish. Serve as a side dish with the Beef & Cabbage Casserole or the Braised Brisket with Carrots.
