Mindful Meats Hot Dogs -- Frozen

The meat from Marin Sun Farms mindful meats cow is unlike any other beef available today. This beef has intricate natural intra-muscular marbling due to the mature age of the cow (between 3-10 years old) and deep rich flavors that you just can’t get from young beef. 

This beef is similar to that of wine or cheese; with age comes more complexity and nuance in the flavor and texture. They have a complex quality control program to ensure they choose the best cows for their steaks. The dairy breed lends a sweet and deeply buttery quality to the meat.

They graze the majority of their feed from the fields and pastures. When they come in for milkings twice a day they are given a custom mixed ration of organic grains. This grain ration throughout their life adds a sweet grain-fed like meat prole, while the nutritional constitution of the meat is more close to that of grass-fed with high CLAs, and omega 3s. It truly is the best of both worlds.

Local tomatoes are just starting to roll off the vines, and we have over 200 pounds coming into our kitchen this weekend! One-third are Roma tomatoes that we slow-roast, and the rest are ripe heirloom varieties from local farms, which we blend fresh with Painted Serpent cucumbers (also from Riverdog) and a splash of our probiotic-rich sauerkraut brine. A delightful change of pace on warmer days. What could be better? And where else will you find a probiotic, organic gazpacho? This traditional Ashkenazi Jewish spread, a dairy-free distant cousin to our regular Chicken Liver Pâté, is a recipe developed by our store sampler supreme Danielle Deibert. It's a great holiday appetizer, savory breakfast dish or anytime snack. Chicken livers are sauteed with our own "fatastic" chicken schmaltz, chopped and mixed with hard-boiled pastured eggs and fresh herbs.

Our new Apple Honey Cake was created by our cook and baker Maya for your Rosh Hashana celebration. It's made with Bernie's Best applesauce from Sonoma, coconut flour and unfiltered California honey. The cake can get a bit crumbly when warmed up, but it does bring out the flavors. Enjoy!
